Banana protein cake
INGREDIENTS
- ⅓ cup (75 grams) melted coconut oil or extra-virgin olive oil
- ½ cup honey or maple syrup
- 2 scoops orbit nutrition Vanilla protein powder
- 2 eggs
- 5 mashed ripe bananas
- 1/2 cup milk of choice - I like unsweetened coconut milk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
- 1 teaspoon ground cinnamon, plus more to sprinkle on top
- 1 ¾ cups almond meal
- Desiccated coconut to sprinkle on top
INSTRUCTIONS
- Preheat oven to 165 degrees and grease or add baking paper to a loaf pan.
- In a large bowl, whisk the oil and honey together. Add the eggs and whisk well, then whisk in the mashed bananas and milk.
- Add the baking soda, vanilla, salt, almond meal and cinnamon, and whisk.
- Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon and desiccated coconut.
- Bake for 40 minutes, or until a toothpick inserted into the centre comes out clean. Let it cool in the loaf pan for at least 10 minutes. Carefully transfer the loaf to a wire rack to cool before slicing.
