Banana Protein Cake

Banana protein cake

 

INGREDIENTS

  • ⅓ cup (75 grams) melted coconut oil or extra-virgin olive oil
  • ½ cup honey or maple syrup
  • 2 scoops orbit nutrition Vanilla protein powder
  • 2 eggs
  • 5 mashed ripe bananas
  • 1/2 cup milk of choice - I like unsweetened coconut milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon, plus more to sprinkle on top
  • 1 ¾ cups almond meal
  • Desiccated coconut to sprinkle on top

 

INSTRUCTIONS

  1. Preheat oven to 165 degrees and grease or add baking paper to a loaf pan.
  2. In a large bowl, whisk the oil and honey together. Add the eggs and whisk well, then whisk in the mashed bananas and milk.
  3. Add the baking soda, vanilla, salt, almond meal and cinnamon, and whisk.
  4. Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon and desiccated coconut.
  5. Bake for 40 minutes, or until a toothpick inserted into the centre comes out clean. Let it cool in the loaf pan for at least 10 minutes. Carefully transfer the loaf to a wire rack to cool before slicing.
