Blueberry and Vanilla Protein Pancake Stack
Ingredients
- 1 scoop (30g) Orbit Nutrition WHEY – Vanilla
- 200g wholemeal self raising flour
- 1 teaspoon baking powder
- 1 egg
- Pinch of salt
- Pinch of cinnamon
- 250ml milk of choice – I prefer unsweetened Almond or Coconut Milk
- 50g Greek yogurt
- 1 teaspoon vanilla extract
- Squeeze of lemon
- 100g blueberries
Instructions
- Step 1Combine all ingredients (expect the blueberries) in a bowl and mix well.
- Step 2Fold in blueberries.
- Step 3Heat a hot plate to a medium heat.
- Step 4Melt a touch of pure butter or coconut oil in the pan.
- Step 5Add a spoonful of the pancake mix. Cook on one side until bubble start to form (around 2 minutes) then flip pancake.
- Step 6Cook for a further 1-2 minutes on the remaining side before serving.
- Step 7Continue with the remaining mix until all pancakes are cooked.
- Step 8Best served warm with your choice of toppings. We used fresh lemon juice, and organic stevia mix for topping plus some additional fresh blueberries.
