Sticky Date ‘Protein’ Puddings

Enjoy a high-protein sticky date pudding that tastes amazing without the empty calories of the real thing. Made with own Grass Fed Vanilla WHEY protein to create a high protein treat that you’ll love.

Ingredients

  • 150g dried pitted dates
  • 250ml hot water
  • 3 tbsp.pure  maple syrup (sugar free as a low calorie option)
  • 1 Tsp vanilla extract
  • 3 large eggs - separate the white and yolks. 
  • 85g gluten free flour
  • 2 scoops Orbit Nutrition Vanilla Grass Fed WHEY
  • 1 tsp. baking powder

To serve:

  • Tbl Spn Greek yoghurt
  • Pure Maple syrup (sugar free as low calorie option)

Method

  • First, preheat your oven to 160°C.
  • Add the dates and water to a pan and bring to a simmer. Break up the dates with the back of a wooden spoon and leave to simmer until the dates have completely broken down.
  • Transfer the dates to a blender or food processor, add the maple syrup and vanilla, and blend until smooth.
  • Transfer to a mixing bowl and whisk the egg yolks into the date mixture.
  • Then, sift the flour, whey protein and baking powder into your bowl and mix in.
  • Now, whisk your egg whites either by hand or with an electric whisk(preferred) until completely stiff.
  • Then fold the egg whites into your mixture.
  • Line the bottom of each pudding mould with a little maple syrup, then fill with the mixture. 
  •                 Place in over to cook for approx 25-30 min or until knife comes out clean when inserting into puddings 
  •                 OPTION: to have them soft and moist like a real pudding, add mixture into seperate muffin moulds and add foil tightly to secure. add each muffin mould into a baking tray, add water to fill the baking tray about half way and place into oven for 45 min 
  • Serve with a drizzle of maple syrup and a dollop of Greek yoghurt — YUM!!!
